White Chicken Chili ( easy ) πŸ™ŒπŸ»

I am notorious for picking up my ShopRite from home order and grabbing a few rotisserie chickens on the way home. I love to make a quick chicken salad to have in the refrigerator for lunches. I grabbed an extra one this week to whip up this amazing and fast week night dinner. Our activities have started back up again and we are a busy family. Sophia is involved in gymnastics, dance, soccer, Taekwondo, and school. On nights when we will be running through the door at 5:30 I like to have my dinner already prepared and ready to eat. Tonight I made this awesome homemade and easy White Chicken Chili! It is minimal prep and has so much flavor! I hope you enjoy it as much as we do!

White chicken chili

Rotisserie chicken

1 green bell pepper

1 onion

1 jalapeΓ±o

1 can diced chilies

1 jar salsa verde

1 box chicken stock

1 can white beans

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Heat oil and brown peppers and onion add chicken meat. Add diced chilies and salsa verde. Add chicken stock and spices. Add beans and bring to boil. Let cook on low for 1 hour … enjoy with yummy toppings like cheese, avocado, sour cream , green onions
