When your kids seem to not be feeling well and the weather man is calling for a foot of snow it tends to send a mama into a tailspin. That’s pretty much my scenario for this evening. Sophia has been coughing for a few days with a runny nose and Priscilla started this morning, but for some reason they both just seemed off to me this evening. I decided instead of waiting and worrying with the pending snow within in the next 12 hours I would take them both to the dr to be on the safe side…. and to put this crazy mamas mind at ease. Let’s be honest this years flu season has been scarier then ever, and recently a story came close to our hearts. Thankfully both girls checked out with bad colds and we were on our way home, but it was past 7 pm and we hadn’t even had dinner yet. I thought quick and fed the girls but what about hubby and I.
I quickly prepared this delicious pizza and let me tell you it came together quickly!!!! I normally let my dough sit out for hours to rise but tonight I threw it in the oven for just a few minutes to soften and become easier to roll out. As most of you know I am not eating meat right now after my food poisoning so this was a vegetarian dinner that my husband is still raving over as we sit in bed and I am typing. So I would say it is a hit with meat and veggie lovers alike! I hope you can give this amazing pesto pizza a try! It’s great for this Lent season as a Friday night meal or anytime you want to have a meat free dinner. It would also be delish if you decided to add some grilled chicken!!!
Buitoni basil pesto 7 oz
Mozzarella cheese shredded 8oz
Feta cheese crumbled 1/4 cup
Spinach 1/2 cup
Broccoli 1/2 cup chopped
Salt and pepper to taste
*Sprinkled garlic powder/ red pepper flakes/ oregano on top to taste
Preheat oven to 425 degrees
Roll out dough with flour and place on pizza pan or cookie sheet sprayed with olive oil cooking spray. Place in oven for 5 minutes before toppings. Take out dough. It will be slightly golden. Put on pesto and spread evenly. Place mozzarella cheese, spinach, broccoli, feta cheese and spices. Bake for 20-25 minutes until pizza is golden brown and cheeses are melted completely and bubbly.
