Corned Beef Nachos

St. Patrick’s Day is all about tradition. That yummy corned beef and cabbage dinner that tastes delicious but takes hours to make. I have decided to make a version of that meal that tastes amazing, is fun to eat, and can be made in 30 minutes, or even faster if you are pressed for time! This fun nacho treat is a great play on an old classic meal. I made homemade chips because I was dying to use my new mandoline slicer my mom bought me for Christmas, but I have a few time saving tricks up my sleeve to save you time too! If you are not the type to slice your own potatoes you can go to your local grocery store and pick up store made potato chips. We love the potato chips from our local Stew Leonard’s! You can also use french fries too! Instead of cabbage I made a quick homemade coleslaw! If you are pressed for time your deli counter will have awesome varieties of coleslaw to choose from. You can pick up a small container while you grab the shaved corned beef at the deli. These short cuts will help you decide if you will have this meal on the table in under 30 minutes ( from scratch ) or 15 minutes ( with short cuts)! Either way I can promise you this will be a favorite, especially with the hubby’s!


1-2 white potatoes washed and sliced thin

fying oil

shredded corned beef

1 onion

shredded swiss cheese

shredded cheddar cheese



*** Fry potatoes in a deep frying pan on stove in vegetable oil on med- high heat. Look for them to be golden brow. Let dry on paper towels and add salt when hot. While potatoes are frying slice and cook onions in oil. Slow cook then till golden brown in a 1 teaspoon of oil. Once golden brown add shredded corned beef. Cook till slightly crispy. Assemble potatoes on sheet pan add shredded cheese, meat & onions, more cheese and broil. Take out of oven and add coleslaw and scallions. I added chips on top for more crunch!

*** If you decide to buy chips skip the frying step and start with onions and corned beef. Assemble same way and broil. Top with store bought coleslaw and scallions!

** Coleslaw Recipe

1 bag coleslaw mix

2 tbsp sour cream

2 tbsp sugar

2 tablespoon vinegar

1 tablespoon mustard

1 teaspoon celery salt

Salt & Pepper

1/2 cup mayo

2 tablespoon onion powder

Mix all ingredients except coleslaw mixture together in a bowl till mixed well. Add coleslaw mix.
