Buffalo Chicken Stuffed Peppers 🤤

Dinner needed to be quick last night. We had errands to run and Sophia had practice. I grabbed a rotisserie chicken at the grocery store and improvised with ingredients I had at home. I could not believe how quickly I had dinner prepped and in the oven. It took me less than 10 minutes to make the stuffed pepper filling and the peppers cooked in the oven for about 30 minutes. This was the perfect week night meal. I made the kids a quick quesadilla because buffalo chicken is a little spicy for them, but perfect for a low carb dinner for us! I hope you enjoy this as much as we did!!!! 

 

Recipe:

3 large Peppers ( I used Green Bell Peppers)

rotisserie Chicken 

1 tablespoon cream cheese

2 tablespoon sour cream

1-2 tablespoon blue cheese crumbles

1 stalk celery chopped

few stalks of green onion chopped

1/4 cup buffalo sauce

1/4 cup shredded cheddar cheese ( plus some to sprinkle on top)

 

Preheat oven to 350. Pull apart chicken and break into small shreds, put into mixing bowl. Add all ingredients and mix well. Cut peppers in half so you have 6 pieces. Stuff peppers and finish with a sprinkle of cheese on top. Bake in oven for 30 minutes or until brown. Enjoy! 🙂
