Buffalo chicken spaghetti squash πŸ€€πŸ™ŒπŸ»

Since my husband works from home, I tend to make breakfast, lunch, and dinner! We try to eat healthy balanced meals… but we also love things that have flavor! I had this spaghetti squash sitting on my counter so I knew it was time for us to eat it! I picked up my ShopRite from home grocery order this morning and rushed home to get lunch started! This meal was intended to be made with the meat from a rotisserie chicken… but I forgot to pick one up. This called for a little bit of improvising. I used a few of the girls healthy chicken nuggets … you know the ones that have the secret veggies in the coating… πŸ˜‚ my hubby had no idea! This delicious and mostly healthy lunch was ready in an hour. The longest part of the cooking process was baking the spaghetti squash… but it was well worth it! Hope you enjoy my lunch recipe!

Buffalo Chicken Spaghetti Squash

Spaghetti squash ( roasted ) *

Rotisserie Chicken ( or nuggets ) πŸ˜‚

Buffalo sauce 1/2 cup

1 tablespoon cream cheese

1/2 cup shredded cheddar cheese

2 stalks celery chopped

Few cherry tomatoes chopped

Scallions chopped

* roasted squash split in half face down for 45-55 minutes at 350 with olive oil salt and pepper

Scoop out squash add to bowl. Add all ingredients and mix well. Add back into squash shell and broil on high for 2-4 minutes till bubbly! Enjoy!!!
