Easy traveling with Easyxplorer

Have you traveled with a toddler? It’s not always fun and there are days when we barely get down the driveway before I hear “are we there yet!” Our family loves to travel and I love to keep Sophia busy on our car rides. Easyxplorer is a fun travel tray that goes across your child’s lap safely and comfortably fitting across the car seat. The child can place a snack, toys, crafts, and even an ipad or book right on the surface of the tray. It is the perfect size for children to feel comfortable in their seat and be occupied while on a car ride. I use this for Sophia when we are traveling to allow her to have a snack or to draw pictures. She can use the pockets to fit her markers in and she loves to put her snack and juice box in her compartments too! We love the easyxplorer!

Fresh Bellies … 😍

Whether you freeze it into pops or spread it on a cracker… or just simply eat it with a spoon… fresh bellies purΓ©es are a delicious treat! πŸ˜‰ My girls like their veggies … but they don’t love them. I am always trying to find new ways to get them excited to try veggies. When I came across fresh bellies I thought this is the perfect thing for them to try. Priscilla loves the purΓ©e with a spoon. She is my less picky eater. With Sophia I needed to get a bit more creative. We decided to try it on her favorite crackers… and she ate the entire snack plate! That afternoon, she and I used the leftovers from the containers and made yummy ice pops with a little added banana and coconut milk! Sophia loves to cook so this was a great way to get her excited about trying something new! She ate an entire pop and asked for a second… Priscilla ate one too! I love fresh bellies !!!!! Backyard Birthday Party

Sophia will be 4 on Monday!!! I can’t believe how fast the years are flying by. My little girl is growing up right before my eyes. She is so excited for her birthday and couldn’t wait to help me plan her “Friend Party.” She and I went shopping and she wanted to pick every single detail herself. She chose a unicorn theme and picked her decorations, plates, and napkins. She was so excited picking out her goody bags for her friends and hand picked every single candy to go inside of her piΓ±ata. ” My party is going to be perfect she said!”

Of course as her mom I wanted to be sure I made her party special. Yesterday I worked hard on creating the most adorable cupcake ice cream cones, cupcakes, and a mini cake. All with my famous marshmallow butter cream. I love making homemade frosting, I actually can’t imagine eating a cake with store bought frosting.. eh.

This morning I prepared a fruit salad but made it in the shape of a rainbow on my cutting board. It came out adorable and was a big hit at the party. I would love to say I thought of this all on my own, but I have to give Pinterest a little love on that one! I think having a good variety of healthy snacks at a birthday party is key. While the kids played outside they had options of pirates booty, goldfish, and fruit to snack on while we waited for pizza and cake. It was perfect for the backyard setting. We planned ahead and ordered pizza to be delivered at the party… what kid doesn’t love pizza! After lunch it was time for the piΓ±ata…. that was so much fun!

The kids had a great time today… and seeing the smile on Sophia’s face was worth every minute! Tonight before bed she looked at me as she she wiped her tired little eyes and said “Mama do you think my friends liked my party?” I said ” Yes baby, yes I do” She just smiled and fell asleep. I looked at my husband and said I am so happy she had such a good day. These are the moments we live for as parents.

Sweet Potato Turkey Chili for the winπŸ‘ŒπŸ™ŒπŸ»

We woke up this morning so excited to get outside and try out our brand new playground! You see we had it installed yesterday but this crazy New England weather turned from bad to worse so we couldn’t even zip down the slide once till 8 am today! I promised my girls we would have our coffee and breakfast on the playscape… and that’s exactly what we did!!! This morning’s weather was so strange for an August morning. It was windy and cold. The girls were actually wearing fleece jackets. This weather got me thinking it is the perfect day for the fair! We got dressed and spent the day at a great state fair! The first one of the season! At the fair I couldn’t help but kick that feeling of Fall. Yes I know it’s still summer, but Fall is my favorite season. I decided it was the perfect day for a fall meal! I turned to my Pinterest and one of my all time favorite meals…Sweet Potato Turkey Chili! It is incredible and it is healthy! It doesn’t get much better than that! Buffalo chicken spaghetti squash πŸ€€πŸ™ŒπŸ»

Since my husband works from home, I tend to make breakfast, lunch, and dinner! We try to eat healthy balanced meals… but we also love things that have flavor! I had this spaghetti squash sitting on my counter so I knew it was time for us to eat it! I picked up my ShopRite from home grocery order this morning and rushed home to get lunch started! This meal was intended to be made with the meat from a rotisserie chicken… but I forgot to pick one up. This called for a little bit of improvising. I used a few of the girls healthy chicken nuggets … you know the ones that have the secret veggies in the coating… πŸ˜‚ my hubby had no idea! This delicious and mostly healthy lunch was ready in an hour. The longest part of the cooking process was baking the spaghetti squash… but it was well worth it! Hope you enjoy my lunch recipe!

Buffalo Chicken Spaghetti Squash

Spaghetti squash ( roasted ) *

Rotisserie Chicken ( or nuggets ) πŸ˜‚

Buffalo sauce 1/2 cup

1 tablespoon cream cheese

1/2 cup shredded cheddar cheese

2 stalks celery chopped

Few cherry tomatoes chopped

Scallions chopped

* roasted squash split in half face down for 45-55 minutes at 350 with olive oil salt and pepper

Scoop out squash add to bowl. Add all ingredients and mix well. Add back into squash shell and broil on high for 2-4 minutes till bubbly! Enjoy!!!

Chocolate Chip Cookies πŸͺ

Sunday’s are family days in our house! We love spending time together and making memories. A lot of our best moments are made right in our kitchen! Sophia and I love to cook together and today we whipped up homemade chocolate chip cookies! Sophia loves to be a part of every step of the baking process. We love these cookies right out of the oven or days later! These are truly a yummy family favorite! We hope you enjoy!


1 stick salted butter room temperature

1/2 cup packed brown sugar

6 tablespoons white sugar

1 egg

1 teaspoon baking soda

2 teaspoon vanilla

1/2 teaspoon salt

1 1/2 cups flour

1 1/2 cups chocolate chips ( or however many you like πŸ˜ŠπŸ™ŒπŸ»)

Preheat oven 350 degrees

Soften butter and brown sugar in bowl and mix till smooth. Add white sugar and mix well. Add in egg and whip till smooth. Add vanilla, salt, baking soda.. mix well. Add flour and mix till all ingredients are incorporated. Fold in chocolate chips. Place aluminum foil or parchment paper on baking sheet. Roll dough into balls and bake. I slightly flatten tops of balls before placing in oven 😊

Bake 8 minutes for small cookies. Then I add 2 minutes at a time and watch cookies carefully. My cookies baked for 14 minutes total and were perfect!!!!

Couples Date Night…. We traveled all over the world!

Our family is very fortunate to have a really great group of close friends! We love to get together and have a good time! Most of us have small children so our time spent together is usually at one of our homes. We decided this past weekend to have a game night at our house. It was so much fun! Everyone chipped in and brought an appetizer. The children had a blast running around our playroom and the adults sat around our dining table to play board games. We were really excited to be one of the first groups to try a new game called When In Rome! Its a fun interactive game played with your Amazon Alexa! The game splits you into two teams, and through a series of guided questions by Alexa, takes you around the world in your airplane. You whisk off to different countries and answer questions about that area of the world. We had a lot of fun trying to figure out the answers together since most of us are not world travelers. The game was a lot of fun and the night was even better! There is something special to be said about good friends, good food, and laughter! I cant think of anything better for a Saturday night! Getting into “Back to School Mode” Sneaky Chef

Sophia is going back to school in a few weeks. She is so excited to get her supplies ready. She has already picked out her back pack and matching lunch box. She and I started talking about what types of lunches she can pack for her new school year. This is her first time packing a lunch. This year she will be staying at school longer and having lunch with her friends. I explained to Sophia that her school is a nut free school. She wanted to learn more about being a nut free school and what other options she had for school lunches. Sophia loves peanut butter and Nutella. In our house these two things are eaten all of the time, but in school they are not welcome. We wanted to find new and exciting alternate versions for these two favorite foods. Two thumbs up for YUMBLE KIDS!!!

Food delivery service for your kids? …… YES!!!! Let me just start by saying I passed over this concept a few times. I thought I don’t need this…They wont eat this… How good could it be….Will it taste good…. Is it worth the cost??? Every single one of these questions in my mind made me pass over this amazing concept time and time again, until one day both my girls and I grew tired of the Mac and Cheese / Grilled Cheese battle! You see my girls are so picky, especially my oldest Sophia. She will basically only eat the two foods I just mentioned no matter what I have tried. She will be 4 this month and I so desperately wanted her to try new foods and be excited about eating!Β  I decided to give Yumble Kids a try.. and it was one of the best decisions I could have made! Every second from the moment it came to the door has been a fun experience for my children. The box is fun to open and brightly colored! The food containers are decorated with fun characters and kept ice cold and frozen! There is even a fun packet inside with tokens, coloring pages, and playing cards for the children to collect. This concept is a step above the rest in my opinion… and this is even before trying the food! Sophia was so excited just from opening the box she wanted to eat the food right away! This morning Sophia ate her entire egg… the whole thing… this sort of thing NEVER happens in our house!! Priscilla is obsessed with their broccoli tots! I cant say enough about the taste! My two girls have been able to share each meal. To me, this is well worth the investment. Pass the Saalt!

Being a mommy is a tough job… it can be even harder during that time of the month. I happen to suffer from endometriosis which makes my periods even more painful and heavy than most women. I try to put on my big girl pants so to speak and push on through my day, but there are some days when I just feel overwhelmed. I feel like I spend so much time running to the bathroom to change my women products and this is precious time wasted as a mom.
